Sugo Finto – Vegetarian Meat Sauce

This is the perfect sauce for any season.  Rich in vegetables, full of flavor and healthy as can be.  This is not just for vegetarians or vegans either, this can fool the biggest meat lover you know.


Olive oil

475 g Carrots

600g Celery

200g White Onions

300g Red Onion

500g Yellow Bell Peppers

200g Leeks (white part only)

5 Cloves Garlic

675g of crushed tomatoes

1 cup Red wine

You will need a large heavy bottomed pot for this sauce. To start, chop all of the vegetables into a similar size then sautéthem in olive oil until the onions are translucent and all is well cooked, almost roasted.  At this point, add the red wine and let simmer down a bit then cover and let cook for 15 minutes. Remove the lid then add the crushed tomatoes (from a can, not prepared sauce with spices) and cook for 30/45 minutes.  Add salt and pepper to taste.
